Foodservice Recipe: Chef Sam’s Parmesan Roasted Asparagus
Farm to School Foodservice Recipe
Ingredients
16 lbs Asparagus spears
2 tbsp + 2 3/8 tsp Olive, salad, or cooking oil
2 1/8 tsp Kosher salt
1 tsp Black pepper
1 quart + 1/8 cup Grated Parmesan cheese
Procedure
Preheat oven to 400°F.
Toss asparagus with olive oil, salt, pepper and cheese. Place in an even spread out layer on a parchment lined sheet pan.
Roast for 15-20 minutes or until asparagus is tender.
Hold warm until service.
